Meatless Monday- Easy Peezy Buffalo Chikn Wraps (Around $5 and 5 Minutes!)

 


I recently had a conversation with the fiancé, as many couples do, surrounding hypotheticals that aren’t actually hypothetical. I wanted to know if we could experiment with eating less meat. (Actually I posed the question “what would you do if I stopped eating meat entirely?”) and he was puzzled.  “I wouldn’t know what to cook for you.”  Meatless Mondays are a great time to experiment with new recipes, especially for the man to try something that isn’t doused in bacon grease.

 

If you’d like to cut back on your saturated fats while still getting your protein and feeling full- veggie protein that still tastes delicious (tofu is great but sometimes selling a reluctant partner or kid on tofu can be tough!) I recommend easing into it once a week with Meatless Mondays.

 

 

Morningstar Farms Chikn Wraps

 

I have three basic criteria for food: frugal, healthy & easy.  If it meets that, I will try anything.  Fiancé agrees but it has to be delicious with flavor and cheese- so this buffalo chikn wrap was a perfect compromise.  Since it was my turn to cook, I loved that ingredients were simple for a meal at home or to take to work for lunch.

Buffalo Chikn Wraps:

-Morningstar Farms Buffalo Chikn Patties (cut into strips)

-Tortillas (we used whole grain)

-Romaine lettuce (you can use salad or sprouts!)

-Buffalo Sauce and/or mayo

-Cheese

-Veggies of choice (bell peppers in strips, shredded carrots or diced tomatoes)

 

 

Buffalo Chikn Wraps with Morningstar Farms

 

Wraps are pretty self explanatory- pile it on, wrap it up.  If you want it to be super tidy, tie it up with a shred of paper towel.  Paper towels are pliable and can tuck to keep things secure (especially if you have little ones in the house who like to make a mess!).

Keep all solid ingredients in strip form so they’re long and skinny and don’t turn your wrap into an overstuffed taco.   The Morningstar Buffalo Chikn Patties have some zest so depending on your desired spice level you can add more sauce or tone it down with mayo.  Sprinkle on some shredded cheese and you’ll be in heaven!

So what did my adorable fiancé think about this recipe?  He loved it! I loved that it was easy to make and had about 34% less fat than animal protein without sacrificing flavor of that nice full feeling that lasts longer than veggies alone (though I love my veggies!) so it was delicious combo.

 

I love wraps since tortillas keep for extended periods in the fridge, and you put a variety of veggies inside it to make it work… a versatile recipe that uses up whatever you have lying around.  With frozen chikn patties, you’ll always them on hand for a tasty recipe like this!
